  • 1 small onion diced
  • 2 large carrots peeled and diced
  • 2 ribs celery diced
  • 2 cloves garlic minced
  • 6 cups chicken broth
  • 1 1-ounce package dry ranch dressing mix
  • 4 cups cooked shredded chicken
  • 8 ounces frozen egg noodles
  • 1 cup cooked bacon crumbled (+ more for garnish)
  • 1 8-ounce package cream cheese, softened and cubed
  • 1 cup half-and-half or milk
  • 2 cups shredded cheddar cheese + more for garnish
  • Green onion chopped (for garnish)

Instructions
 

  • Sauté the Aromatics: In a large pot or Dutch oven, melt butter over medium heat. Add the diced onion, carrots, and celery. Sauté for 5 minutes until softened. Add the minced garlic and cook for another 30 seconds.
  • Add Broth & Seasoning: Pour in the chicken broth and stir in the dry ranch dressing mix. Bring to a boil.
  • Cook the Noodles: Add the frozen egg noodles to the pot and cook according to package instructions (typically 8–10 minutes) until tender.
  • Add Chicken & Bacon: Stir in the shredded chicken and crumbled cooked bacon. Reduce heat to low.
  • Make it Creamy: Add the cubed cream cheese, stirring until fully melted and smooth. Pour in the half-and-half and mix well.
  • Melt the Cheese: Stir in the shredded cheddar cheese until fully melted and incorporated into the soup.
  • Final Touch: Taste and adjust seasoning if needed. Let the soup simmer for 5 more minutes, stirring occasionally.
  • Serve: Ladle into bowls and garnish with extra bacon, shredded cheddar cheese, and chopped green onions. Enjoy warm!
