  • 1/4 tsp baking powder

  • 1/2 tbsp poppy seeds
  • 1 tbsp lemon juice freshly squeezed
  • 1/2 tsp lemon zest
  • 3 tbsp milk dairy or plant-based
  • 1 tbsp vegetable oil or melted butter
  • 1/4 tsp vanilla extract

Instructions
 

  • In a microwave-safe mug (10–12 oz size), whisk together flour, sugar, baking powder, salt, and poppy seeds.
  • Add lemon juice, lemon zest, milk, oil, and vanilla extract. Stir until smooth and well combined.
  • Microwave on high for 1 minute and 10–20 seconds, or until the cake has risen and the center is set. (Microwave times may vary.)
  • Let cool for 1–2 minutes before enjoying. Optionally, dust with powdered sugar or drizzle with a lemon glaze.
